In the West ‘chai' has become a syrupy latte, but in India chai simply means tea – and masala chai is tea brewed with milk, sugar and a blend of aromatic spices. It's less a drink than a daily ritual, a pause in the day shared with friends, family and complete strangers alike.
Every chaiwallah (tea seller) has their own recipe, and Indians are fiercely loyal to their favourite.

Some of the best travel memories in India happen over chai. A tiny clay cup (kulhad) passed through a train window at a rural station; a glass shared with a shopkeeper who insists you sit down; the 4pm break when the whole office stops for a round. Chai is the social glue of Indian life, and accepting a cup is one of the warmest ways to connect with people.

While masala chai reigns in the north and centre, other regions have their own brews. In parts of the south you'll find filter coffee rivalling tea for affection, while Kashmir sips pink, salty noon chai.
